Maybe you have fresher spinach?

Mine comes out pretty much the same every time I've done it. Remember if you're cooking with olive oil, keep your heat down. Olive oil doesn't do well with high heat. I think I normally cook it around 3-4 on the dial. I also use fresh garlic.
