Not sure, different path might cause different frequencies to be attenuated

by the time it gets to one observer verses the other. Higher frequencies tend to be lost more quickly. It'd be interesting to take the same two people with the same headphones and see if they still hear something different. Even then, you might get different results since different people's hearing reacts differently to different sounds. Higher frequencies in the sample might be missing from an older person, for instance. Having stereo audio with constructive/destructive interference and adding a whole other set of paths could cause it too.

This is all, of course, a guess.
