I think you misunderstood the assumption I was making here

My assumption was that the merger would take place when the Big XII's current agreement expires which I think is in the next 3-4 years (maybe 5).

Now if the merger wants to take place before the Big XII's agreement expires and the Big AAC or AAC 2.0 (whatever name you want to use here for the merged conferences) remain with ESPN, then why would ESPN care if the Big XII exists or not. Texas can air all of its home games or all games on the LHN, which is property of ESPN, or the ESPN family of networks or join another conference, which currently has a contract with ESPN, for all other sports. While the remaining 9 Big XII schools join the AAC. ESPN has not lost any rights during this process since ESPN has a contract with both the AAC and the Big XII. Even if Oklahoma or WVU joined the ACC or SEC, ESPN has not lost anything since ESPN has a current contract with the ACC and SEC.
