Some general thoughts
I've been going to vegas for many many years and have done really cheap and really expensive and had all kinds of experiences. My last trip was about a month ago so I'm familiar with the current environment.
For hotel, there are a lot of new casinos and even some of the older ones are in the process of getting rennovated. The bridge you mentioned, those are all over the strip now plus a couple of trams and it is really easy to get around. If you want the best rates, sign up online for a free player's card (MGM, Caesar's, Wynn are the big three companies who own most of the casinos). That will get you access to discount pricing.
If you want to play poker, look up where the big money games are and then avoid those spots. My one buddy is really good (and a bit obsessed) and he usually ends up at MGM, Venetian or Wynn for poker. So you might find your style at NYNY or Mirage or Planet Hollywood off the top of my head.
And for sports books, stay away from the big ones that always get mentioned. MGM, Caesar's, Mirage, Mandalay Bay are not worth it. You can find more modern setups, better seating, and less crowds at some of the smaller spots like Cosmo, Wynn, etc. I actually went to the Venetian sports book for the first time this year and really liked it. Great seats and views.
For bars, there are just too many choices. You should just basically pick based on what kind of people you want to see. Different casinos and sections of the strip have different personalities.
Hope your son has fun. Tell him to tip the waitresses at the tables and they will make sure to find him for refills.
