Lots of people just enjoy excelling at something in particular

Let's be real, most guys who play college football don't have any semblance of an NFL future. Beck was a 2018 recruit, the ones in that class with the most talent and athleticism played as true freshmen (Turner, Hollifield, etc.). Then he missed the entire 2019 season with the collarbone injury. It's not impossible that, starting from there in 2020, that he could develop into an NFL-caliber running back, but the odds are even more heavily stacked against him than the average college player.

If pro sports isn't in the cards for you, and you could be an OK or even pretty good football player, or an extremely good/championship-level track runner, a whole lot of people would choose the latter. I mean, even at the pro level, LeBron James probably could've been a pretty good player at any pro sport he wanted to be. But he was truly excellent specifically in basketball.
