Duke's Nirvana


A week or so ago, I went to Heritage Family Market in Fincastle and got a container of their delicious pimento cheese spread.

My S.O. ended up baking some bread over the weekend, so I cut two slices. I placed the pimento cheese between the two slices making a 3 inch thick sandwich. Then I got a small frying pan and melted some butter in it. Next I took my Duke's Mayonnaise and slathered the outside of this sandwich with about a tablespoon per side, placed the coated sandwich in the frying pan and slow grilled it. When it was nicely melted and toasty on the outside, I plated it with a thick slice of my favorite Black Krim tomato topped with a slice of avocado; diagonal cut through the sandwich with homemade refrigerator pickles garnishing the plate.

That's what living's all about.
