I eschew most South American Coffees as too acidic for me


IF I do buy, I've had good results from Panama.

I prefer beans from Sumatra, Indonesia, Papua New Guinea in the Pacific. In Africa, I buy Rwandan, Burundi, and Ethiopian. I'd stay away from Yemen.

Check the sweet Maria's website. They go directly to the farms and co-ops to buy. They also list the dates of the coffee arrival. I'd buy a pound of a few types of green coffee, then roast 1/2 lb at a time to gain a feel.
