1 1/3 cup flour
1 TBS sugar
2 Tsp baking powder
1/2 Tsp salt
2 eggs - separate yolk and whites
1 1/4 cup milk
3 TBS vegetable oil

combine the dry ingredients in one bowl
combine yolk, milk and oil in bowl #2
beat the egg whites until you get a white froth
mix the wet and dry bowls together
fold in the egg whites

Been making the batter fresh for years -- this is easy and produces very fluffy waffles

(and yes, I've made it so often I can recite by memory)
