I believe Joe's Crab Shack went to a similar model


Instead of showing a "service charge" on the bill as the tip, Joe's came up with some formula to determine the "service charge" value for each item on the menu and added it to the price. Supposedly if you take any combination on the menu, then the total cost should be an 18-20% increase from the total cost based on the old prices. I haven't eaten there since the change, so I don't know if that true or just an advertising ploy.
