Sprinkle on Montreal steak seasoning, then smoke over the favorite wood of


your choice until the steaks reach an internal temperature of 115 degrees. Then reverse sear them on a cast iron grill plate that has been heated to 500+ degrees. I find that it takes about 90 minutes per side / edge for a PERFECT medium rare.

Enjoy the smell of smoky goodness with each and every bite of your steak. I prefer a New York strip for it's great marbling.
