Many NFL safeties are better in coverage than the CBs at the college level. So while the level of player around the QB may increase in the NFL, so does the level of play on the other side.

At Clemson for instance, the talent Watson had around him was often substantially better than the talent defending those guys. In the NFL, that gap will close drastically (the difference between the Patriots and Browns for instance is MUCH closer than the gap between Clemson and Troy or even Clemson and Boston College).
