Take the 5 yard holding penalty, run the clock down to 4-5 seconds, and then give the Vikes time for one last play? Then you play a true goal line D, or tackle the WRs again.

I've seen that done to some degree before, although maybe not as obvious as a tackle, and it has worked. Seems like a good option for this scenario.
