grill 'em slow, move them around a lot, and don't sauce till the very end. Make your own dry rub...garlic, onion, black pepper, and whatever you like...chipotle, chili powder, cumin, whatever. NO SALT in the rub. Any commercial sauce you buy will have all the salt you need. If you make your own, add a little salt. My favorite home made sauce...brown sugar, a little yellow mustard (don't worry, you loose the taste), microwave till it melts/dissolves...add in some cayenne.
