Anyone have smoked chicken wing recipe?


I hate chewy, fatty wings. BW3s started going downhill so I've been making them at home. Brine overnight, dry, shake in bag with tablespoon of baking powder, then go in 450 oven for about an hour. Google "oven crispy wings" if that sounds appealing.

Was in Kalamazoo, Michigan for a golf tournament last week. Stopped in at Latitude 42 brewery (awesome BTW) for lunch. They had smoked wings that fell off the bone. Talked to chef and he said they smoke them for 2 hours and then fry them. I'd like to avoid frying if possible but will purchase air fryer if I have to.

I found one recipe using baking powder and then smoking but said to only smoke for 30 minutes. That doesn't sound like "fall off the bone." Curious if any here has mastered smoked wings. This may become a Saturday afternoon experiment during football season.
