Each item in a store that has self checkout has it's UPC code tied to that item's weight. Ever notice that the self checkout will not let you proceed with the next item until you place the item in the bagging area? That bagging area is a scale that will compare the change in weight to the UPC for that item. There is a "Skip Bagging" option sometimes, but think that would have caught attention after a certain time as well.
