I'm still an experimental smoker. I have a long way to go. But I


write everything down like a mad scientist, to keep track of what works. This time, I bought two 4 pounders instead of a single bigger one, and stacked them on 2 racks. I think 8 hours should do it. But I just checked, and the heating element went wild (it's an electric that I got for Father's Day) and it was at 265. I opened the door and got the temp down fast, but who knows? I'm no chef, for sure. The smoke is cranking beautifully, I know that much.

Also, last minute, I threw some drumsticks in there - totally no seasoning - to see what happens. I'll give them 3 hours, then change them out with the rest of the pack that I'm doing a quick marination with hot sauce.
