Re. RotJ, Lucas' original plan was for a battle between Wookiees and

the Empire, but he decided to go for something cute to try and sell toys instead.

Maybe try this...at about the time Ewoks show up on screen, stop watching RotJ and watch the end of Avatar instead. I was never a big fan of the political posturing in Avatar, but that movie nailed how to do a climactic final battle between a low-tech/physically superior race vs a high-tech/physically inferior race. Pretty easy to just sub out Wookiees and the Empire for those two roles.
