Finally bit the bullet...


Went Big Green Egg for Christmas - did smoked wings for a warm up practice cook...
Followed that up with a 9 pound pork shoulder that I put on at 9PM and didn't touch until my wireless temp probe let me know that the temp hit 200 at about 8:30 the next morning. Wrapped it in foil and towel and put in cooler for 3 hours. Took it out and shredded it.....
Best shoulder I've ever done!
