WADR, I'd strongly recommend starting small with epoxy
until you learn what you are doing. One of the fancy-pants live-edge 6-ft long river tables will likely cost you over $1000 just in raw materials alone. Epoxy can be a bit fiddly until you know what you are doing, and getting it finished to the mirror smooth finish that looks like something you could dive into requires some of the tools and skills normally reserved for automotive paint finishing.
Basically, it IS NOT as easy as it looks. It requires some tools you probably don't have and some experience you probably don't have. Making a large project is going to be very expensive and you'd much rather get it right on the first try. Getting it right on the first try isn't going to happen until you have some experience.
So start small.
