Basically I have a high regard for Rogue One, sure, a lot of "one more thing we gotta do" but it explains the too convenient flaw in the death star and a theme of having faith in a result you will never see. The deepest SW by far.

A New Hope just because it was the first one (I still call it "Star Wars") that first time thrill at seeing something and all those loose threads just create room for the imagination to fill them in.

Things started going north for me in the return of the Jedi with the Ewoks signalling that SWs will now have characters written in to appeal to preschoolers. Also the beginning of the trend of reusing the same plot over and over and there's that damn death star again. (Imperial fleet, whatever)

I might have liked some of that 1-3 stuff but it creates a problem that it fills in the background story which narrows the imaginative power that you were left in New Hope, letting you fill in the details. OK, had a tough childhood and a lazy teacher now we understand.

Never saw Natalie Portman must have been the time when I lost that "must see" desire. Start of celebrity appearances in SW. Glad she could make a buck. Hated the last Jedi and yeah Jar Jar Binks was a continuation of that Ewok thing. Disney thing? Frozen had a nice dar Hans Christian Anderson thing going until they brought in Olaf. Just what they seem to do.
