I love beef ribs. I'm talking about the big dinosaur-looking rib racks that come from the plate or the chuck. Not those skimpy 'beef back ribs' which come from slicing the rib section from a whole rib eye. Sous vide beef ribs are magnificent.

In my area I only have one butcher that sells plate ribs - not bad but not great quality, at $7.20 a pound. No one sells chuck ribs. All the grocery store butchers have them pre-cut into short ribs. The BJs in my area has them cut that way but they at least are about 5 inches long each.

I found an online beef merchant that has both chuck and plate ribs pretty reasonable - less than $6 a pound - but charges $25 to ship so you need to place a big order to make that cost effective.

I've heard that Costco has them in some stores but I don't have one near me.
