First run at smoking a turkey….


Spatchcocking is the way to go!!!!!
Family decided we’d do Thanksgiving yesterday so we could all watch the Hokies together. Bought a 23 pounder last Saturday and allowed it to thaw in fridge until Fri morning. Removed it from packaging, dried it, flipped it breast side down and went all Game of Thrones and removed the spine…..carved into the back of the breast bone with a cleaver and flipped it over and flattened it out. Dry brined it for 24 hours with Kosher salt, pepper, a little brown sugar. Took it out of fridge yesterday morning at about 730, put KosmoQ #dirtybird rub all over, and lit the Egg….locked temp in at 275 and threw it on at 0900.
Drizzled with butter twice and then drizzled with Maple Whiskey glaze at 150 and 155 degrees. Pulled at 160 and let it rest…..
