I go to 200-205 degrees regardless of the time


sometimes I wrap it (with butter and a bit of liquid like beer or apple juice) after the stall at 170-175. At that point the bark is set and I have found it to be a bit more flavorful using that method. I also like it without wrapping change it up just to keep life interesting.

Once I pull it off the smoker I put it in a cooler, cover it with towels, and let it rest for at least 90 minutes.
