Several weeks back I used the recipe that @HokieAllMyLife posted to make my own bacon by curing and smoking an 8 lb porkbelly. Last night I decided to make my first BLT with the homemade bacon. I prepared a spread using good mayonnaise, some fresh lemon juice, and a bit of Honey Hog rub from Meat Church. I toasted some organic wheat bread purchased from the Costco bakery and lightly buttered it. I sliced giant tomatoes and perfectly ripened avocado and pulled some fresh lettuce. I put everything together for my wife and daughter and they grabbed some chips and started digging in while I put my sandwich together. They were both enthusiastically saying it was the best BLT they had ever had and I couldn't wait. I sat down and began eating and I was thinking ... ok, it's pretty good but it isn't the best BLT I have ever had. The mayonnaise spread was really tasty and the vegetables were really fresh but I felt like it was missing something.

I proceeded to clear the table and start putting things away and found the bacon that was supposed to be on my sandwich. It was a really good LTA. I am still pissed off and I'm going to make another one (with B this time) for lunch.

I should mention that I spent a couple of hours at a brewery earlier in the afternoon but I am certain that had nothing to do with this particular blunder.
