There are other ways of storing energy, though...


One example: Lake Oconee and Lake Sinclair in Georgia. During the day, the level of Lake Oconee goes down by about a foot and a half, as electricity is generated for daytime use. At night, when there is less electrical usage, excess production is used to pump water back up from Lake Sinclair into Lake Oconee. This change in gravitational potential energy of all that water that was pumped back up is one method of storing energy when generated at off-peak hours.
