It’s a great dish and easy.
The key is how long you let it marinate and temperature.
At least 24 hours, I prefer 48 hours, the amount of lime juice affects it too don’t use too much. Citric acid will cold cook a protein like ceviche.
Let it marinate and cook it slow, also baste it with the liquid while it cooks.
