They come out great...couple of pro tips...


I always soak mine for about a half hour, changing the water a couple of times. gets some of the funk from the nitrates and such out.

Next, use a "gentle" wood for your smoke...apple, peach, etc...avoid hickory and especially mesquite (IMO).

Finally, wrap it real tight with foil once you get to about 160 degrees...then take it to 190-195. Wrap in a towel and rest it for an hour or so before slicing...
