I get the queuing theory and just-in-time delivery type stuff.
and how this event is an unplanned "shock" to the system but how long does it take for the system to stabalize again? Milk? right away, it spoils and cows are producing pretty much exactly what people drink every day and the supply chain presumably is pretty quick. Canned goods? not so fast, probably a steady-state process at the factory that doesn't respond quickly to spikes. Snow shovels? if they're sold out in the fall, you'll probably have to wait a year for a new batch.
But back to say, tp, how long does it take to restock? a couple days? a week? and don't forget that many households are now good for a long time.
