Walked through Wegman's a few days ago and they have a whole section

on nutritional stuff eg protein powders etc. I think that happens a lot, big box etc. absorbs the niche market stores over time, bought some stuff at a shelving store many years ago, now all that stuff is in one aisle at say Home Depot. 'course the big stores might stock the ten items that the niche stores sell a lot of eg 90% of their sales and not cater to other very specialized needs.

In general though, the US retail world is vastly overserved compared to every other country in the world. There may be some reversion to the mean.
