If you have decreased kidney function you should limit consumption. Maybe some forms of arthritis as well.
Otherwise, you should be fine unless you are gorging on things high in it. But too much of anything is bad for you - turning orange from too many carrots, water intoxication, etc.

There are some plants that are so high in it that they are considered poisonous. One is the leaves of rhubarb.

I don't know Sally Norton, but generally I do not trust "scientists" that release info via video blog and ask for donations. At some point they become influencers not scientists.
