I went with a "generous" shake on some sirloins over the weekend

Seared on the IR side grill and then indirect heat on the main grill to finish.

Oh, my, they might have been the best steaks I ever grilled.

I definitely want to try the smoke method and finish with the pan on the grill or my IR. Hell, I'll try both. Firm believer in the low and slow for any meat.
