There used to be "canneries" in most small towns and we would take bushels


of apples from two big trees in our yard. They had big vats that you could cook them down and then a machine that you ran it through to separate peels, etc.
Then you loaded into your jars and they would process or they would can it for you. Could do a lot in a short time! Best applesauce ever!
