Cooks evenly, and makes them "airier" inside...


On a waffle maker that doesn't flip, you'd have to wait for the batter to rise to contact the upper plate. Plus, when you flip it it quickly sets the outside crust and allows the inside to be light and airy...

I'm no chef, but I use the heck out of my waffle maker....
