There lies the rub, most MD crabcakes don't use Maryland blue crabs...

Those big crabcakes that look like they cut a softball in half for $25? Nuh-uh. Asian crab, kinda rubbery blah, but with big chunks of crab the width of your finger.

Real blue crab is wonderful, spicy, lighty sweet, but you're going to pay dearly for them, maybe two hockey puck sized crabcakes for that same $25. But it's worth it. And yeah, it's a lot of work as I would know attending the Baltimore Hokie club crabfest in August. (wink, wink)
