I asked a rep of Lil Italian Cafe in NOVA that very same question

and here is how explained it to me. Whenever I place an order via Grubhub, some money comes out of the restaurant's profits. He assumes the restaurant pays a fee to Grubhub or DoorDash to cover the cost of having the restaurant's name, current menu, and online ordering service be available to customers. It might be a rob Peter to pay Paul kind of situation if a restaurant is paying a monthly fee to the various sites. Depending on how the contract is structured, it is possible the restaurant only pays the fee to Grubhub or DoorDash whenever someone uses their service vs. ordering directly from the restaurant's website. It wouldn't surprise me if Grubhub and/or DoorDash are really charging a fee to both the customer and the restaurant for their service.
