It's a recipe, and it's a PITA, but it makes darned good waffles


Mix the following dry ingredients together in a separate bowl:
1 c flour
1/2 Tbsp sugar
1/2 Tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon

In a different bowl, beat the following wet ingredients together:
4 Tbsp butter, melted
2 egg yolks
1 tsp vanilla
1 c buttermilk

Add the dry ingredients to the wet ingredients and mix. Best to do this by hand, do not over-mix.

Finally, fold in the following:
2 egg whites, whipped

And yes, separating the eggs does make a difference. It keeps the waffle "light" instead of "heavy."

Looks like a lot of work, and frankly it is. But I will stack that waffle recipe up against any other.
