I use multiple racks...


for up to 3 different “recipes”, including today when I had the mashed potato, green bean and sweet potato casseroles all in at the same time. They all had different cook temps and times on the formula... err... recipe.

However, decades of experience and experimentation give me the confidence to pretty much ignore specific measurements in most recipes. I use recipes as a baseline ingredient list with suggested cooking environment and then wing it in terms of amounts, cook times and temps, etc. I’m not sure if we even touched a measuring device when putting thanksgiving together this year and it was probably the best food yet.

The only thing that really limits my rack usage is volume... we simply don’t cook enough volume to need it.
