and it depends a bit on how you cook them. I always cook mine at 550 for about 12-15 minutes and then slow roast it at 265 until temp hits 122. A 3lb roast at 550 is going to cook REALLY quickly so you might want to decrease the time at the high temperature if you do that. I typically do a 7-8 lb roast so you may only do 6 minutes on the smaller one and 8-9 minutes on the larger one.
