Easy. Several hours prior to grilling, brush steak with olive oil ...


while drinking a beer. Then rub/press in the seasoning of your choice (salt/garlic/pepper is great) or you can use a pre-mixed seasoning while drinking a beer. Let the steak get to room temperature. This could take several beers.

When grilling (and I only use charcoal) make sure the grill is at LEAST 450, preferably closer to 500 or more. Obviously at temperatures that high you need a fairly thick steak or you will have cardboard in short order. Don't overcook - may only have time for one beer depending on the thickness of the steaks. When complete, let it sit for a few minutes while you open the (first) bottle of wine.

Cut with a really good steak knife and serve with a loaded baked potato. And wine.
