Times have really changed. I graduated in mid eighties

and come from of a family of eight kids.

Parents rule:

1) If you do not go to college, then you immediately got a job. You paid a fix rate for board, food, and utilities. Mom still made meals for you, kept a clean house, and probably did your laundry. I think it was 200 bucks in the eighties.
2) You graduate from college. Once you have job, you pay the same as above in number 1. By the way. the parents loan you money to get through college, and they need a large monthly payment because they have kids behind you that are in college. In my case, that college payment was higher than my rent where I was not living at home but shared an apartment in Reston.

My thoughts:

The amount paid by your son needs to be a good chunk of change and not based on what he is making. If entry level work does not give him the life style he chooses, then he will get another job or make money on the side somehow (painting, lawn care).

Your son needs to learn that life basics are food, clothing, shelter and a working car. The amount of money he makes determines:

1) how well he eats and dresses.
2) the quality of housing and the car he drives.

I am glad you are starting at 21 vs. waiting 5+ more years. Good luck.
