I learned the secret to grate pot roast from a buddy who lived with me.


Cram as many celery leaves into the pot as you can. The flavor is incredible. They can easily be picked out with a fork later, unless you like eating celery leaves.
If you get to the produce manager on the right day, you can get as much as you need. They trim the majority of the leaves from the celery that's put out.
