Don't laugh, but I bought an 8" chefs knife from IKEA once -

for only about 18 bucks, and it's great. I had a nice Shun that I used for everything, would even take it on vacations, and I ended up leaving it in Destin like an idiot. Anyways, I was amazed by this piece of junk from IKEA - super sharp out of the box, and while it doesn't hold its edge as well as a nicer knife, it sharpens back up very very easily. I'm in the habit of pulling it out along with the sharpener almost every other time I use it, and it's lasted a while. So cheap I bought several to keep in different places in the house....including the trusty tailgate box.
