The problem with UConn is you will never be able to sell
UConn football to the football schools. Also, the pairings have more to do with making sure each member has 1 true conference rival for multiple sports. Not worrying about who teams will play during "Rivalry Week." If you add UConn, then who is Louisville's main rival in basketball?
As far as who plays who during "Rivalry Week" in football, I have already figured that out. Back when teams only played 11 regular season games, "Rivalry Week" covered the last 2 weeks of the regular season. So the ACC schools still get to play their SEC rivals during Thanksgiving Weekend and they will play their ACC rivals the weekend before. Also, the weekend before could be used to schedule Duke vs. UNC and NC State vs. Wake games. FWIW there was a period of time when the UF-FSU game was played the weekend before Thanksgiving Weekend so both teams had an open date Thanksgiving Weekend.
